After you open your camera app hard/long press on the display and a small icon with a line and a tiny sun will appear as well as a circle with a lock symbol. This is the auto exposure control and lock. You slide the sun icon to increase/decrease the exposure before taking your pic.

How do I control the exposure in camera on the S22 Ultra? I don't want to do this after the picture is already taken, I want to get it in camera so I'm not losing any image data. All of my pictures are coming out overexposed and the contrast is way too high.

I have that setting. However, I have to adjust it every single shot. All indoor shots are automatically too high by default. If I am taking shots at a location, I would like the EV setting stay the same... at least until I close the app or change lens/mode.
