Unfortunately Carrier locked phones are susceptible to bundled apps being installed. They push the apps through what's called a carrier app manager.

I'm questioning the security of the security update as when I downloaded it came with three games that I didn't request. I have removed all bloatware from my phone several times. I'm on Verizon with a s23 ultra

Unless your rooted, you did not remove all bloatware, just the apps you didnt want and could uninstall. Unfortunately since your device is carrier branded, youll always have random apps you dont want coming from your carrier. You should question your carrier, Samsung isn't the problem.

Fyi, you should always buy an unlocked phone directly from Samsung.
