What do you mean by sleep mode? Having apps put to sleep for battery optimization is not done via sleep mode.

Sleep mode is for the watch and phone for when you want to get some uninterrupted sleep. It turns on do not disturb, lowers your screen brightness or puts your phone in greyscale and disables certain features of the watch.

If you have apps that are sleeping and deep sleeping, that is battery background usage restrictions. It puts apps you don't use often to sleep to prevent them from running in the background and using up your battery. Deep sleeping apps use even less background resources. Apps will operate normally even when sleeping or deep sleeping if you open them up to use them. You may have to re-allow some permissions when you wake them up. If you want to control which apps can be put to sleep, go to battery/background usage limits. Tap on the tile and turn on (or off) "put unused apps to sleep". This setting automatically takes not of how often you use certain apps and will put occasionally used ones to sleep, and rarely used ones into deep sleep. You can move any app into or out of sleep at any time by either selecting it and removing it from sleeping apps (or by simply opening the app). You an also set apps to never auto sleep. The fact that half your apps are asleep likely means that the auto sleep slider is on. As I said, the fact that they are sleeping means nothing in practical terms, as your apps will still work when you open them, so you don't need all caps help.
