I'm having the same issue with my S25 Ultra, although this has been a consistent issue for the last 7 generations of galaxy devices, there isn't much to be done about it, samsung's implementation of touch protection has gotten slightly better with detecting it isn't in a dark environment and knowing when the device is actively being used by the user in a dark environment but it's still not what it should be and probably never will be, it's a limitation of the sensors and the fact the screen is easily tricked.
