I'm sorry to say the rollback option has been disappearing for some users as the final release build nears. I had the option last week, but it's now gone from Smart Switch. I had to flash 8.0 on my S25U to trade it in. I wouldn't recommend Flashing software since it can't mess up your device if something is done wrong.

There is no option to roll back to 8.0 after leaving the beta program.

You must connect your device to a PC and downgrade using Smart Switch. Make sure you back up data prior to rollback as doing so will effectively factory reset the device.

I did first withdraw beta program via Samsung Members app. And then connected to Smart Switch app on my PC using USB cable. The downgrade option does not appear at all. Looks like Samsung has changed or broken something at their end.

Update... I was able to downgrade S25 Ultra's OneUI from beta 8.5 to official 8.0 after Downgrade button popped up in Smart Switch app on my PC yesterday. Not sure if Samsung has actually fixed something at their end.
