You can change the colors of chats, but not the app background. Only the chat bubble colors will change. There's a limited palette of solid colors, and you would select the colors for each chat and only if the chat is RCS. Otherwise the chats follow the color scheme of the palette you chose for your phone. You can always try contacting Google and giving feedback for accessibility options/color changes for the app as a whole.

The way it is, is if you want to use RCS with all it's benefits, you will have to switch to Google. If you don't care about RCS and want to continue with SMS, you can switch to another messaging app like Textra or, apparently, find an old phone running Android 11.

I have very poor vision as well. Can't legally drive without corrective lenses, so on and so forth.

Out of curiosity, what specific colors do you need that options like enlarged/bold fonts and other vision enhancements can't make up for? I find the default blue highly visible, even moreso with high contrast fonts enabled.
