Does One UI 6 utilize more ram? It seems heavier than previous build.

Seems that way to me as well, but my S23U has 12GB so it has plenty. May be problem with those with 8GB. Also could just be the beta and will be further optimized as they make updates to the final build.

Yes, beta uses more RAM. Once we get the official, it will be far less RAM usage.

Same thing happenned last year with S22 with UI 5.

Agreed. Maybe that's why the S24U is rumored to have 16gb of ram
