Never knew of major issues until years later Samsung Galaxy 9+

I've had my phone for several years and there's nothing wrong with it, except ONE MAJOR ISSUE that I NEVER EVEN KNEW about the following until years later!!!  

1. Today was the first time I ever used earbuds with my phone. Just experimenting with them.  When they were paired to my phone's Bluetooth, the system asked what kind of music I wanted to "PLAY" so I just selected Samsung Music, and as soon as I did, personal conversations started playing one after another!  This included text messaages as well.  There were hundreds and hundreds.  I quit scrollng after awhile.

1.  There is nowhere I can find to UNINSTALL this the Samsung Music app.  I am 100% sure it came with the phone!

2. Regardless of what I could find on the internet, I could NOT locate where there is a "supposedly" an area to UNCHECK "RECORD CALLS."  I spent a half hour looking for that and cannot locate it.  

3. I am not ready to, nor do I need to, purchase a new phone, as this 9+ and it's camera are super, BUT I NEED HELP PLEASE BECAUSE EVERY TEXT MESSAGE AND EVERY CALL TO WHO-KNOWS-WHO and FOR WHO-KNOWS-HOW-LONG WERE ON MY PHONE!

I know this an older phone, BUT, it is STILL a Samsung.  Can someone please, please help me stop my phone from recording every single word I  (and others say)!  I just told some of my Samsung phone friends about this, and they became quite concerned and was going to check into this also.

Open Settings: Swipe up on the home screen to access your apps, then tap the Settings app. 

Accessibility: Tap on "Accessibility" within the Settings menu. 

Screen reader: Tap on "Screen reader". 

Voice Assistant: Find the Voice Assistant switch and tap it to turn it off. 

Follow Prompts: You may see prompts asking you to "Allow" Voice Assistant permissions or to turn off certain functions. Tap "Allow" and "OK" as needed.

Not sure about music part but for the recording I would check voice command setting I think it's in Google account folder should be able to turn off

The Samsung Music app can absolutely be uninstalled.  Even if it can't you do not have to use it, you can download and use any music app that is compatible with your phone.  I never heard of connecting a BT device and being asked "what kind of music I want to play".  One connects their headgear and then selects their app.  Maybe older phones did it differently, but I don't remember that ever happening. Nothing auto records without a setting having been turned on by the user. Perhaps you did so a long time ago and forgot.  If you have that much recording on your phone, you surely must be low on storage space.  You might do best to start clean, and factory reset your phone. After 7 years of use, it might be time. Until this latest update, Samsung phones did not record phone calls.  You may, as someone earlier said, have turned on some accessibility setting, but I am not aware that any talkback or voice assistant use retains recordings.
