I had to uninstall the Wear app, reset/unpair the watch and reinstall from the link provided by the OneUI Beta (where you click to join this beta, you're navigated to a Wear app for the beta specifically). It took me a few tries and finally gotten the OneUI 8 beta update in the Wear app itself. It's a mess lol.

I got the updates back to back. It did take a full 24 hours after joining the beta though before the first one came through.
