Try this:
1 - Open Settings and go to Apps.
2 - Look for the app named Device Health Services.
3 - Open it when you find it.
4 - Tap on Storage, then Manage Storage (bottom left).
5 - Tap on 'Reset Adaptive Brightness'.
6 - If the problem persist, you can try 'Clear All Data'.

(I have a shortcut to this setting on one of my home pages. Makes it a bit quicker to reset)

According to what it says, keep adjusting the lightning while having adaptive lighting on. Eventually it will learn your preferences in certain lighting conditions
