It happened again last night. Quick solution was toggling the schedule OFF and back ON during the window of time and DND immediately turned on and ended as expected. This is definitely a beta 1 and beta 2 issue.

1. Open Samsung Members → One UI Beta Program → Beta Feedback. 2. Select Error reports and attach any relevant screenshots or screen recordings (if available). 3. Make sure “Send system log data” is enabled before submitting.
Important: For accurate log collection, please submit the report within 3 minutes of reproducing the issue and do not kill the task of the Samsung Members app until you receive notification that the error has been sent (about 5 minutes)
