I signed up for the beta program and I don't know if we will have the finalized update or not? I don't want to keep waiting for it because my phone was acting weird recently

Yup. The point of beta is to help them get to the stable version

If you joined the beta expecting the stable software to be released in an a week or so, then your best bet would've been to avoid it the moment it crossed your mind.
It's being released in October, and it has been delayed further by Google, so there's going to be a considerable amount of time to wait, and I suggest you roll back to 5.1 at the best chance you have.

Beta is never expected to be an update itself. It's a test platform to find and catch bugs. Like others have suggested, you'll be better to follow the procedure to get back onto stable 5.1.
