I found how to bring back the app icons in notifications. They apparently made it a setting that can be toggled now. Go to settings, notifications, advanced settings, tap the toggle for show app icon in notifications. Once you receive a new notification it will show the app icon.
Update: it seems once it is enabled it only works with new notifications, so if you have any that are not showing the icon clear them and it should show the next time they appear.
