Who's your carrier?! I have an at&t prepaid sim but, my S21 ultra is unlocked directly from Samsung. Sometimes checking Software Update or even restarting helps.

I'm in the t-mobile bought from the store. Nothing for the S21 Ultra 5G yet. It's t-mobile for some reason

I think everyone needs to just relax a bit. Remember beta testing should be just for fun I would never recommend anyone joining any beta test on a phone they would need to use daily and especially frowned upon phones that are used for work to join beta.
