For certain features to be exclusive to the s25 series, how is that even possible if they have been testing it for three years. What device where they using to test it on?

Apparently the 8 Elite has better hardware capabilities. Most of the features will come to the S24 Ultra series. Its the plus and regular models that might not get much.

What's different about the ultra than the others in the series besides cameras, screen resolution, and battery?

Nothing. Thats the frustrating part as I have the s24+ and we won't get the camera log feature despite having the same hardware as the Ultras

They created the software, now they're taking it apart to limit it on pre-S25 series phones.
