Fold & Flip Phones
Am I being stupid or is there now not a way to set a separate notification sound for Google messages?

It's ridiculous how it has changed now to have separate notifications for each app.
This is how you now have to do things, go to settings, notifications, advanced settings, scroll all the way to the bottom, toggle on Manage notification categories for each app. Go back out to App notifications, go to Google Messages, notification categories, scroll down to incoming messages, pick the tone you want for the default sound.
For individual contacts, open the conversation, tap the 3 dots, details, notifications, pick a tone.
Hope this helps,
