What brand of telephone headset should I be using with my Galaxy Note 8 phone tp talk/listen to phone calls?

I don't understand the question.  You used the Note 8 too listen and make phones calls with you don't need a external device to do this if you want earbuds I would recommend the Buds

You can use any Bluetooth headphone/earbuds you like. It's really a matter of preference and expense.
