The latest update breaks samsung health functionality I want to continue using

I use Samsung Health to track some of the things it measures, but the latest update requires me to connect it to a Samsung account and give it phone privileges, and set up two factor authentication to continue using it locally.
I do not want any of my health data leaving my phone for any reason, no matter the promised security.
I do not want two factor authentication. I've worked in comsec and know the tradeoffs. I don't need it.
I don't want the app accessing my call data or making phone calls.
I want my privacy!
Is there some way (or can Samsung fix this intrusion on my privacy) to go back to the original functionality, or is there another app that does the same things (count steps, allow review of previous step counts, measure pulse ox) without allowing outside communication.
If this insistence on sending health information is a bug, please fix it. If it's a feature, it's a clear misfeature and needs a bypass.
