How do I lock exposure and focus using the "new" One UI camera app?

Pro mode is gone, fine.  But why cannot I press and hold to lock the exposure?  Recording outside or indoors with bright lights flanking your subject matter is painful!

Is Samsung trying to avoid paying taxes on camcorders or something?

Disregard.

Once you start shooting you can press and hold the screen and a button will appear at the top of the screen (or the side of you're in landscape). - This is different than what happens with photos and that is why I got confused.

Thank you, this solved my problem with AF lock, yet it doesn't lock exposure. Any idea how to AE Lock?

Pro mode isn't gone. Just go to "more" at the end of the list and it's in there.
