The new Now bar feature is pretty in a really awkward and unergenomic location, the bottom of the screen. Plus it doesn't allow me to easily save songs, meaning I have to try and tap the now bar without pausing or skipping and then press the save button. This is especially a massive pain while driving.

You can set it back to the old one if you like

You actually can't set it back unless you turn off AOD. I use Samsung Music, so my interface is different

AOD is turned off and media player is still only in the drop down menu. I also have that awful Now thing turned off.

You can add the widget for your favorite media player app to your lock screen.

Install Good Lock and its LockStar plug-in if you don't already have them.

To edit the lock screen, either open LockStar or just press and hold on the lock screen.

Where the Now Bar usually appears, there will be a button labeled "LockStar".  Tap this and tap "App widgets".  You then get the list of desktop widgets. Choose the one you want and position it where it's convenient for you
