My parents are elderly and they have Samsung phones. Small changes like the camera icon going from red to silver are incredibly difficult for them. You would think that sticking with the default settings would make for the most consistent user experience. However that does not seem to be the case. These types of UI updates are very difficult for people who are older and already have difficulty with technology. It would really be nice if there was a way to keep the UI consistent maybe not for everyone but at least for those who struggle with technology are older or who have disabilities.

Techies never consider the elderly or even the average user. There is a reason Internet Explorer was the most used browser for as long as it was and it wasn't because it was any good.
