Click on the picture you'd like to remaster and then click on the 3 dots, see if it's there.

I don't need to remaster any picture. I want to turn off this annoying function with all its annoying notifications.

Then don't use it? It's there if you want to use it, but you don't have to if you don't want to.

But it keeps showing me the notifications to remaster some pictures and that's very annoying.

Ah, that's what you meant. Hold down on the gallery app, click on notifications, notification categories, and toggle off analyzing and remastering pictures.

There are 2 notification categories Processing and Saving and both of them are turned on and locked. You cannot turn them off.

Unfortunately i don't have such a notification category on my Samsung Galaxy S10. What's your Samsung's model? My system is up to date and i have just updated all apps. Here is screenshot of my notification categories:
