I've had my s7 for about 4 yrs. I haven't had an update since dec 2019. Is the s7 obsolete? How can I get updates for security purposes? Can I update the android sys from oreo to pie or newer?

I know the S8 will still get quarterly updates for Security. Not sure about the S7 though

You can't. I've heard it can't unless with special hardware.(The phone not made by samsung is an example of special hardware.)
