The Bluetooth codec settings are in the Developer Options menu which need to be unhidden by going into settings /about phone/software Information and then clicking build number 5 times. When you are connected to a device that uses LDAC if LDAC codec isn't being used you can manually change the codec in Developer Options. You can't make LDAC the default Bluetooth codec since it's only compatible with a limited number of devices. SBC will always be the default since it's a universal codec.

Idk if you're still having this issue but I was also having this issue. I resolved it by going to my Bluetooth settings and clicking on the wheel next to my headphones and there was a setting to turn LDAC on and off. It is automatically set to off so I once I switched it on I was able to see it in the dev options settings as well as in my sony headphones connect app. Hope this helps.
