Just need to keep the screen from turning off for one particular app.  Is there a way to do this?

The only way I can think of accomplishing anything similar to what you want (without downloading any additional apps) is through Bixby routines. Set up a routine that automatically changes the screen timeout to 10 minutes when the app is open. Not exactly what you asked about, but it's the only way I'm aware of to keep the screen on longer, besides going into the developer options and turn on the option to keep screen on while charging.

Maybe the app called Macrodroid? I think it has the option, but I've never tested it myself.

you can keep the screen on indefinitely by touching and holding a blank spot on the screen.
