Go to settings then tap on accessibility then interaction and dexterity. Toggle off the assistant menu

Unfortunately, if you turn off assistant menu it will turn off the single tap. The way I've gotten around it is I've made the assistant menu icon an edge icon where I can hide it in a corner and it's only half of the icon this way.

You can also change the visibility so that you hardly see it at all.

Trouble is with that menu, it gets in the way at some point.  Should be an option.  All I want is single tap to answer the phone, not an icon that is a pain at some point.
