Text messaging bubble and text color

I'm pretty intelligent with changing settings, themes and customizing my phone, but I'm stumped.

The background color of my text bubbles paired with the color of the text itself makes it nearly impossible to read. I've changed the font, font color, theme, text settings, searched the internet for solutions and no luck. 

Not exactly a cheap phone (Galaxy S20), it seems ridiculous that I can't change this. I just want to change the text bubble and text color in messages for crying out loud! Am I missing something??
