I was wondeing if the Galaxy S21 Ultra (or newer models) had any features that would allow you to not have your Bluetooth visible to others but still be able to connect to your already synced devices?

Galaxy S21I believe that you become visible when you enter the BT screen and of course whether BT is on or off, Nearby scanning scans and connects so turn that off too.

Unfortunately Bluetooth does not have a way to hide a broadcasts like a wifi ssid does.
