I preferred when my edge panel was visible. Pulling it out now also seems to be less responsive now that they've hidden it. Is there a way to change it back, or have they unilaterally made it more annoying to use without warning me?

Do you mean the edge panel is completely transparent now? To adjust this go to Settings>Display>Edge panel>Handle
