No problem. Honestly, there's quite a few old features that I wish they hadn't phased out. Hopefully they may reconsider & bring that ability back.

It's easy.
Settings->Apps->Email->Long Press on Notifications->Notification Categories->Long Press on New Email->Sound->Pick new sound
