Galaxy S21@CluelessPhoneGuy Most likely the guides that you have been viewing are on an old version of the OS and UI.
In phone settings -> Accessibility -> Talkback -> Settings -> Text-to-speech, click the gear to the right of "Preferred engine"
It should take you to this screen
If you click on "Install voice data", you can install other voices which can be chosen by clicking the gear to the right of the language.
In the screenshot above, there was no gear to the right of "English" until I used "Install voice data" to install a 2nd voice for "English".
