I have 6 phones next to me that are all previous phones, NOT ONE OF THEM CRASHES without a sim in it. all of them can be used, some of them are used as media devices for years. What is the problem with the Galaxy S21 ultra? airplane mode, no wifi, no cellular data and the phone is completely unstable!

Boot to Safe Mode and see if it's still unstable, if it isn't then it's one of your installed apps causing the issue.
