I had an issue with Google Fi that was costing me roaming data charges, so wanted to share the solution.
I have a physical Google Fi SIM for the USA mainly. I have an esim for Canada.
When i went to the USA and fired up Google Fi, my Canadian esim disappeared from the menu, but was still active. Whenever i left wifi, it would switch my primary sim from Google Fi to the Canadian esim and start charging me roaming data.
Google fi also keeps turning on data roaming.
The solution was a mixture of removing the physical SIM, uninstalling Google Fi and restarting. This made my esim show up again.
Then reinserting and reinstalling Google fi. It now seems stable on my USA primary sim, but data roaming is still automatically turned on. So just to be safe, i have set my data limit to 0kb on the Canadian SIM.

Can't you just turn off the physical sim? Or make sure the esim is set as the primary

Nope. Exactly the problem, i wanted the physical SIM as primary and it was set that way, but every time i left wifi it would change the primary SIM to the esim.

Did the Canadian eSIM disappear completely from the SIM Manager? It is possible that it may not be compatible with U/U1 variants.

Yes it completely disappeared. It's back now that I've done the remedies.
