What are your go to overall settings for high quality, color accurate photos. Regardless of the situation you're shooting in?

A few of these are subjective. You can activate auto-HDR, but some individuals don't like what this does to colors. Definitely picture softening off, prioritize focus over speed, and capture speed: prioritize quality. In the end, it's about what looks best to you. I encourage you to play around a little bit with the settings to find what works best for your specific needs.

Definitely gonna try some photos during the Golden or blue hour. Golden and blue hour here sucks though lol

I like to go back and forth between HDR depending on what I'm shooting.

I have it set to always off because I can easily add this effect in the editing stage if I want. I also have the quick tap shutter turned on.

I definitely found quick tap useful. I might just leave HDR off myself than.
