I've watched several videos but I still can't change my chat bubbles on my 24+...
Make sure you have the newest version of Google Messages I'm on the beta
Change colors are only available from Android to Android, with chat features on in Google Messages.
To change bubble color, click on a Android contact, you will see the option to change colors.
When RCS launches on Iphones maybe you will ve able to change the color!

It has to be an RCS chat to get the option.
You can tell which messaging standard you're using by checking the the details pane in which it will say end to end encrypted if it's RCS, as well as through little banners in the conversation (shown in pictures).
It also darkens the color of messages and adds a different background in light mode
