Why is it that the new versions come out the system updates ruin our phones

You just came out with the s6 ultra I think and then my phone got system updates every week(which it did automatically even though I have that function turned off) and now my phone barely has any signal anymore... I live in a rural area where the signal wasn't that great to begin with so it's VERY noticeable. This can't be legal, I'm not going to buy a new phone from you when your obviously this corrupt. How do I go back to the old versions before they intentionally **bleep** up my phone. I can't even make phone calls right now unless I'm on the internet....

I have that same issue too, from the last update and I have the s25 ultra. Couldn't make any calls unless on wifi.
