What happened to the screenshot icon in Gallery while watching videos?

You mean the video capture icon? It's still there. Should be to the bottom left of the screen when you have the video tools showing.

While the video is playing tap anywhere on the screen it will be i the top left

Press power and volume down. Or slide the side of your hand from left to right. Or add it to your pull down toolbar.

That's for a regular screenshot, not capturing a still image in a video.

I apologize I miss understood. When recording it's the circled icon for photos while recording

I think I found the problem. I was trying to make a screenshot from a family video that I had in the Private folder in Gallery. Apparently, the screen shot features do not work when the video is in that folder.

That would do it. Temporarily move it out of that folder to get your image capture. Then you can move it back.
