I recently bought new Galaxy Watch 3 and have been using it for about a month. The sleep tracking feature in this watch seems really bad. It detects sleep even when I am sitting on chair or reading in bed etc. What's worse is even when I have browsed through watch functions and apps at 1am (when it showed no sleep at that time), the next day I wake up, it says my sleep started at 12 am. This watch is continuously recording 2-3 hours more sleep per day, so it's basically useless because I myself can tell better how much I slept.
They should have at least given the option to edit start and end times. I'm probably just gonna return it if it doesn't get fixed soon and buy fitbit or something which is less than half the cost and tracks sleep much better.

yes, that happens with me too. So now I try to check sleep duration once I'm up and one before sleep. But checking before sleep doesn't always work once it has decided I'm sleeping.
My new Fit2 is doing exact same thing. Records me asleep when I'm reading in bed at night. Sat outside in the sun today to read and did the same thing, which changed last nights sleep score from 77 to 39! Useless!
