Galaxy WatchTry either clearing the watch cache or resetting the watch. The update may have garbled some settings (it happens). There is no way they would ever remove the transfer option.
I don't have the Ultra, but I have a Watch 7 with the May 1 security update running WearOS5.0/OneUI6.0.
