Galaxy WatchI note 2 items after the most recent update on the galaxy watch ultra
First, two days after the update noticed my health app was not recording all of sleep info and I began digging into my settings I discovered some features that had been working were now turned off and when I tried to turn them back on, I was required to sign off on a couple of privacy notices and liability releases that appeared. Checking the boxes corrected most of these problems. Second, this did not resolve my Oxygen sensor reporting during sleep (Oxygen sensor app for one time check was working). until I just discovered this post, and I proceeded with Samsung's recommendation for the activation and then deactivation of power savings mode and added a reboot, and which appears to have corrected the problem.
Has Samsung published what improvements or tweaks they addressed with this most recent update? I am most interested in if they are getting up to speed with the newer Bluetooth protocols that have caused so much grief for Hearing Aid users. The S25 phone with the One UI 7.0 significantly improved on the situation, but it is still problematic at establishing, switching and maintaining sound channels for phone calls and streaming, as well as streaming to secondary devices. Auracast from my TV is near perfect but the stream still occasionally drops the signal in one ear or the other. I think some of this may also need attention on the firmware end of the Hearing Aid manufacturer. What I did not appreciate over the last year of these Bluetooth upgrades, was the finger pointing between the hearing aid manufacturers and Samsung, and Android over the implementation of the newer Bluetooth protocols for almost a year before any solutions finally started to emerge. I note that I saw several complaints from Hearing Aid users and Apple over similar connectivity issues. Hopefully, this will get ironed out over the next couple of months.

Galaxy WatchThank you for reaching out. I can certainly understand your concern with the Galaxy watch Ultra not tracking sleep and missing gaps in your sleep schedule. I would recommend submitting an error report as soon as you experience these symptoms, because it will send a log of information for our team of engineers to get a look at the symptoms you are experiencing: https://us.community.samsung.com/t5/Tips-Tricks/How-to-Send-Feedback/ba-p/3001692
