Galaxy WatchAre you saying you got a recent update, and this behavior started after it? After an update, it's good practice to clear the watch's cache partition. Also do you have it set to keep screen on for all workouts? Open the health app from the watch apps screen, center any workout and tap the very bottom of the screen under the workout circle for the settings. Scroll down the workout settings and slide on "Screen always on", which will keep the screen on during all workouts.

Galaxy WatchDon't bother with resets or trying to fix, this big come about because of the new update and everyone! Has this problem and there is no fix. There are dozens of threads about it just in the last few days. Submit feedback in the wearable app to tey get samsung to fastrack a fix.
