I am trying to install a couple of apps on my Samsung Gear S3 watch that I had before - Uber, Google Keep, etc. - but they are nowhere to be found in the Galaxy Store. Have they been discontinued for this watch model?

As the apps you have mentioned are all third party apps, I would recommend reaching out to the developers of the apps to see if they have pulled support and to find out the specific compatibility requirements for their apps.
