On my watch, the standard keyboard (besides handwriting) is the one with the most 9 keys (besides zero and space) where there are the numbers and letters above them. I need to press and hold the keys and release on the letter that I want.

My friend has his set somehow, that instead of pressing and holding, he can just tap until the proper letter comes up. Like if he wanted the letter c, he would press 2 three times, as 2 is for ABC.

Does anyone know how I can make my keyboard like his??

I believe this is what you are looking for. When on your watch, when you swipe right to bring up the keyboard there is a settings *. Smart Typing, then turn off Predictive Text.

Just so you don't have missed it; With predictive text active you are supposed to just tap once on each "key combination" and after a few characters you get a proposed word and a list of words to choose from. (Not always succesful of course but depends on what you are writing.)
