I have LTE version of the Galaxy Watch and I prefer to use LTE to connect to the phone. All the notification and etc still work fine. However syncing with the Samsung health app does not work like it did with the Gear S3 LTE version.
It tries to sync but never updates the information, like steps and heart rate and etc. All the apps have been updated I have reset my watch several times and it still fails to update properly over wifi or LTE.
I have the lates version of software on the watch. As of 2/23/19
