I configured it to my right wrist when my left arm  was in a sling, now the watch is on the left. How do I update the settings so my watch knows its now on the left?

I think the app you configured your wrist orientation was in the Samsung Health Monitor.
from the app, you can pull up options from the top left of the screen and tap on your watch on the accessories tab. then you should see an option to swap wrists.
