Curious on if there's a way to add video wallpapers to the home screen like you are able to do with the lock

No its just the lock screen sadly, unless you download an app that does, for now the answer is no

So what about those live wallpapers that Samsung had

They just work on the lock screen

Press and hold on a blank space on the screen and than chose themes. This will open your eyes to Samsung's wallpapers, themes, icons, and always on display options. If you have some photos and want to make it a wallpaper, just simply go to the photo in the gallery click on the photo and than tap on the 3 dots in the top right corner and chose wallpaper. Make sure to chose home screen
