I cannot find how to type a message but not immediately send it.  I want to be able to select a time for it to go.

I have dark mode enabled, so it is black. The icon is blue, if that is what you mean.

Hello. To schedule messages with default messaging app. Next to the area where you type in your message there's an arrow press that, then press the + sign and schedule message is there (screen shots provided). Hope this helps!

Are you using the "Messages" app that came with your Samsung device?  The option is there on mine.  My device is a Note 20 Ultra 5G, updated to OneUI 3.0 (Android 11).  If so, maybe check it for updates?
