I was just shooting a large amount of photos. My scan function has disappeared. My default full screen shooting mode has disappeared. My watermark now reads only "Galaxy A71 5G" where before it said "Samsung Quad Camera
Shot with my Galaxy A71 5G" with 4 dots above it. The functions have changed. I have lost many of them from 11 to 12 to 13. The layout of 13 is as bad as that on an Android 10 feature phone on Assurance Wireless. I pay for more than that. Also, the Samsung Camera app no longer shows in the Galaxy Store so there is no way to check to see if it has been recently updated.
I liked my stock camera experience until it changed. The scan document feature was convenient in app although the angle crop thing was annoying. Google's Photo Scan is better but takes longer (and is no longer in active development, feel free to...

And this developer has better camera apps:

https://play.google.com/store/apps/details?id=com.flavionet.android.camera.pro (this and its Lite version have not been updated since 2021)

https://play.google.com/store/apps/details?id=com.flavionet.android.cinema.pro (this and its Lite version have not been updated since 2015)

These, of course, are pro apps, and should stay pure.

But your stock app shouldn't change from a beautiful full screen experience to a blackberry sized half-screen experience.

What gives?

So you're saying when you open the stock Samsung Camera app you don't see the [3:4]/[9:16]/Full/[1:1] option any more at the top of the screen?

That's all there, but the camera is opening, by default, with a black menu bar with those choices ar the top, two inches of screen space below that shows what I am shooting, below that the Shutter button & other choices and a bunch of black screen below that.
I was in the middle of using the camera (on my other device) when it glitches. Closing and opening did not help, so I force-closed it. When I re-opened it, that's what it looked like.

If I'm understanding your issue correctly, and you're wanting to get your full screen view finder back, you should just be able to tap the [1:1] and change it to FULL. Also, tap on settings and look for "Settings To Keep" and turn on/off the ones you wish.
If I didn't answer your issue correctly, I apologize.
