A step by step of what you did would be very helpful to try out your possible solution. I went into each of the apps and the "Accounts" section, and there is no way to update/change this. Furthermore, I can log in to the Samsung app store with the watch and download apps and install them, so the watch is logged in to my Samsung account, as far as if Bixby is logged in, if the watch is logged in, then Bixby by default should be too. Samsung, ANY HELP>??????

Same issue here. And the backup/reset/restore is not a good solution at all if you use Samsung Pay, because then you have to re-import all your payment cards. It'll probably take an hour to backup, restore, setup pay all over. Big pain, that should be the absolutely last resort.
