It's amazing how many people have simply forgotten that when the S10 series came out it had a separate Bixby button on the left-hand side of the phone to activate Bixby. 

 
That was short lived,. The following year Google in Android 12 mapped the power button to launch Google assistant with a long press, with the power off menu added to the Quick Panel. Every Android phone starting in 2020 the power button was mapped to Google assistant, including all Samsung phones.
 
You had to change it by going to the side key settings, everyone had to do this when they bought an S20 series and later. Then when Smart Switch really took off, people were like set it and forget it. It automatically did it for you because it also moved over your system settings.
 
Along comes Ui 7 and Google says, you want to keep your license for Android, we want you to change it to Long Press for Gemini. 
 
You were able to change it back then, you can still change it now.

Yep, pull down the Quick Panel, power off button, power off menu, side key settings, long press, power off menu.

i mean, we have 3 button: power button, volume up and volume down, i want to customize long press for volume up and volume down to do something else
